FRESH APPLE CAKE 
2 c. all-purpose flour
2 c. sugar
2 tsp. baking soda
1 1/2 c. oil
2 tsp. cinnamon
4 eggs
3 c. chopped apples

Sift together flour, sugar and soda. Mix in oil, cinnamon and eggs. Add apples. Grease and flour 3 (9-inch) cake pans. Spoon batter equally into the pans.

Bake at 325°F for 25 to 30 minutes.

Frosting:

8 oz. cream cheese, softened
1 box powdered sugar
1/2 c. butter, softened
1/2 c. chopped pecans
2 tsp. vanilla

Cream butter and cream cheese together. Add powdered sugar and vanilla; mix well. Add pecans. Spread between layers and on top of cake.
