FRESH APPLE CAKE 
1 1/4 c. oil
2 c. sugar
2 eggs
1 tsp. vanilla
4 to 5 c. chopped apples
1 c. chopped walnuts
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
1/2 c. raisins, optional

Mix together the oil, sugar, eggs and flavoring. Add the chopped apples and nuts. Stir flour, soda, salt and cinnamon in. Spread in ungreased 9 x 13 inch pan. Bake for 1 hour and 15 minutes at 300 degrees. Make topping and pour over warm cake.

TOPPING:

1 c. sugar
1/2 c. buttermilk
1/2 tsp. baking soda
1 stick butter
1 tsp. vanilla
1 tsp. dark corn syrup

Combine all ingredients and boil for 10 minutes, stirring occasionally. Pour over warm cake.
