FRENCH CHEESE SANDWICHES 
8 slices bread
butter
1/2 to 3/4 c. milk
Nutmeg (optional)
1/2 lb. Swiss or Gruyere cheese
3 eggs

Choose a rather firm textured bread. Remove crusts. Butter and make a sandwich with cheese. Press down firmly so sandwich sticks together. Mix milk and eggs together, beating well. Add nutmeg. Dip sandwiches in egg mixture. Fry in hot butter until very brown on both sides. Cook slowly so cheese has time to melt. Cut each sandwich in 4 triangles and serve immediately.
