FRENCH COCONUT PIE 
3 c. sugar
1 c. butter
2 tbsp. flour
6 eggs
1 c. buttermilk
2 tsp. vanilla
7 oz. coconut
1/8 tsp. salt
2 deep dish pie shells

Cream butter and sugar. Add eggs, one at a time, beat well. Add flour, salt and mix. Add buttermilk, vanilla and stir in coconut. Pour in 2 unbaked shells. Bake at 325 degrees for 1 hour 15 minutes.
