BUCKSKINNER'S IRISH SODA BREAD | |
4 c. white flour 1/4 c. sugar 1 tsp. baking soda 1 1/2 c. buttermilk (sweet milk will do) 1/4 c. butter 1 tsp. salt 1 tsp. baking powder Combine flour, salt, baking soda, and baking powder. Mix well and set aside. Combine butter, sugar, and 1/2 cup milk. Mix well and add remaining milk. Add dry ingredients gradually, and mix into a soft dough. Knead lightly into a ball and flatten into a well greased cast iron skillet, about 1/2 inch thick. Bake at 325 degrees for 35-40 minutes. Can also be cooked over an open fire for the same period of time. NOTE: Use lid when cooking over open fire, and take care not to get too hot. Test for doneness with toothpick. |
