CLASSIC IRISH SODA BREAD | |
4 c. flour 4 tsp. baking powder 1 c. sugar 1/2 tsp. salt 1 1/2 c. raisins 2 eggs, beaten 1 c. butter, melted 1 c. milk 1 tsp. caraway seeds (optional) Preheat oven to 350 degrees. Lightly grease a loaf pan and set aside. Place raisins in a large bowl and soak in warm water to plump. Sift together dry ingredients. Place in a large bowl. Add butter, eggs, and milk and mix well. Drain water from raisin and add to batter. Place dough on a floured board and shape to fit pan. Place in greased pan and bake for 1 hour and 1 hour and 15 minutes or until done. |
