CLASSIC IRISH SODA BREAD 
4 c. flour
4 tsp. baking powder
1 c. sugar
1/2 tsp. salt
1 1/2 c. raisins
2 eggs, beaten
1 c. butter, melted
1 c. milk
1 tsp. caraway seeds (optional)

Preheat oven to 350 degrees. Lightly grease a loaf pan and set aside. Place raisins in a large bowl and soak in warm water to plump. Sift together dry ingredients. Place in a large bowl. Add butter, eggs, and milk and mix well. Drain water from raisin and add to batter. Place dough on a floured board and shape to fit pan. Place in greased pan and bake for 1 hour and 1 hour and 15 minutes or until done.

I made this on St. Patty's Day... never made Irish Soda Bread.. it was simple.. and it was delicious... my 20 year old son... took the remainder of the loaf to his roommate to share it with him... I am making another and sharing it with another girlfriend this week... ;)
