ZUCCHINI CASSEROLE 
3 sm. zucchini, quarter into bite size pieces
1/2 c. grated carrots
1/2 c. grated onion
2 tbsp. butter
1 can cream of chicken soup
1/4 to 1/2 c. sour cream
3/4 c. stuffing croutons

Cook zucchini, carrot, and onion in butter until done. Mix into rest of ingredients. Put into baking dish. Sprinkle with more croutons on top and bake at 350 degrees until it bubbles.
