ARTICHOKE RICE SALAD | |
1 c. long grain rice 1 (6 oz.) jar marinated artichokes (chopped, marinate reserved) 3 chopped green onions 4 oz. pimiento stuffed olives, drained and sliced 1/2 lg. green pepper, seeded and chopped 1 c. mayonnaise 1 tsp. curry powder Salt and pepper to taste Prepare rice according to package directions. Place the rice in a large mixing bowl. Add the artichokes, onions, olives, green pepper and mix well. Combine the mayonnaise, reserved marinade and curry powder in small bowl. Pour the mixture over rice artichoke mixture stirring thoroughly. Season to taste, refrigerate 4 hours. |
