PATRICK'S WORLDS BEST ALFREDO
SAUCE
 
Creamy and delicious!

1 cup half & half
4 tbsp. (1/2 stick) butter
dash of cayenne pepper
2 sprigs rosemary
1/2 tsp. olive oil (EVOO)
1 egg yolk
8 oz. Parmesan cheese, finely shredded
1/2 (8 oz.) pkg. cream cheese
salt and pepper, to taste

Bring all ingredients (except cheeses) to slow boil, reduce heat to simmer. Using egg whisk slowly beat in shredded cheese. Stir constantly for 30 minutes. Take off heat and whisk in cream cheese.

Serve over linguine or fettuccine pasta and let the fist fights commence when it comes time for seconds!
