CHEESE ENCHILADAS 
1 sm. onion (chopped)
1 med. bell pepper (chopped)
1 sm. jar pimentos (optional)
3 tbsp. butter
1 can celery soup
1 can cream of chicken soup
1 lb. Velveeta cheese
3/4 c. milk
1 1/2 lbs. hamburger meat
2 pkgs. flour tortillas

Saute' onions, peppers and pimentos in butter. In large pan add 1 can celery and 1 can cream of chicken soup, 1 pound of Velveeta cheese (cut up), and 3/4 cup milk. Add sauteed mixture to this and cook over low heat until cheese is melted, stirring often. Brown hamburger meat in skillet. Salt and pepper to taste. Take 1 tortillia and about 2 tablespoons meat and roll and place in 9 x 13 pan, until all tortillas are used. Pour cheese mixture over tortillas. Bake at 350 degrees for 25 to 30 minutes.
