THREE CHEESE ENCHILADAS 
1 1/2 c. shredded Monterey Jack cheese
1 1/2 c. shredded cheddar cheese
3 oz. softened cream cheese
1 c. salsa
1 med. red bell pepper, diced
1/2 c. sliced green onions
1 tsp. cumin
8 flour tortillas

Combine 1 cup Monterey Jack cheese, 1 cups cheddar cheese, cream cheese, 1/4 cup salsa, pepper, onion and cumin; mix well. Spoon on tortillas, roll and place seam down in a 13"x9" baking dish. Top with remaining salsa and cheese. Bake until bubbly and hot.
