GREEN CHEESE ENCHILADAS 
In a large skillet cook 1 pound ground beef. Finely chop 1 onion. Add to beef, grate 1/2 pound cheese. In thawed tortilla corn shells, which have been softened in oil fill with meat and cheese and some chopped green chilies. Roll up and put in a casserole. In a pan put 1/4 cup butter.

Stir in 1/4 cup flour. Add 2 cups milk (for a white sauce). Heat to boiling, add 1 can chopped green chilies and 1/2 cup processed cheese. (Very important that this is processed for the flavor to be the best.) Cook over low heat, until cheese is melted. Pour over the enchilada and cover. Bake at 350 degrees for 20-30 minutes. Then sprinkle with sesame seeds and serve.
