ZUCCHINI CAKE 
3 c. grated zucchini, or squash
3 c. sugar
1 1/2 c. oil
4 eggs
3 c. flour
1 c. nuts
1 1/2 tsp. cinnamon
1 tsp. salt
2 tsp. baking powder

FROSTING:

3 oz. cream cheese
1 stick butter, softened
2 c. powdered sugar
1 tsp. vanilla

Grease and flour a 9x13 pan. Mix zucchini, sugar, oil and eggs. Combine dry ingredients. Mix the two together. Bake in 300 degree oven for 1 1/2 hours. Cool.

Make frosting by blending until smooth. Frost cake. This is extremely moist, rich! (I take and grate my zucchini and measure out in 3 cups batches and freeze. Then just thaw when ready to use.)
