KING RANCH CASSEROLE 
1 chicken, boiled & deboned
1 pkg. tortilla
1/2 lb. cheese (reserve some for top)
1 tsp. (or more) chili powder
Salt & pepper
1 onion
1 bell pepper
1 clove garlic
1 can cream of chicken soup
1 can cream of mushroom soup
1 can enchilada sauce

Saute onion, bell pepper and garlic in butter. Grate cheese. Mix all ingredients together except tortilla. Soak tortilla in hot chicken broth 1 minute. Layer tortilla and chicken mix in casserole dish or pan. (2 to 3 layers depending on size of chicken.) Bake at 375 degrees for 30 minutes. Just before its done, sprinkle cheese on top.
