TOASTED PECAN STUFFING | |
1 1/2 c. Planters pecan chips 5 tbsp. butter 2 med. apples (peeled, cored and chopped) 1 c. chopped onion 3/4 c. chopped celery 3 c. uncooked brown rice 1 (46 oz.) can chicken broth 1 tsp. poultry seasoning 1 (12 to 15 lb.) turkey In skillet, over medium heat, brown pecans in 2 tablespoons butter, stirring until lightly browned. Set aside. In 4 quart saucepan, cook apples, onion and celery in remaining butter until tender. Stir in rice, broth and poultry seasoning. Heat to a boil. Reduce heat; cover. Simmer for 45 minutes or until rice is tender and liquid is absorbed. Stir in pecans. Spoon into neck and body cavity of turkey just before roasting, or bake in 4 quart casserole at 325 degrees for 1 hour. Preparation time: 20 minutes. Total time: 1 hour, 20 minutes (casserole preparation). |
