Boil and pick chicken (one or more chicken). Saute 1 medium onion and 1/2 stick butter, depending on quantity. Add 1 can tomatoes and green chiles (Rotels is okay). (If you stretch the recipe you may need more than 1 can Rotels.) Simmer.
Add cream of chicken soup and grated cheese (Velveeta or American). Use as many cans of soup and as much cheese and sour cream as you want for the quantity you want. Add chicken, stir.
Prepare corn tortillas, torn into strips, grated Swiss cheese, sour cream, mild picante. Layer tortillas, chicken mixture, Swiss cheese, sour cream and picante sauce until casserole is full. Top with Swiss cheese. Drizzle picante sauce over top. Bake in 350 degree oven for about 30 minutes or longer until heated thoroughly.
Deep fry some tortillas for chips. Serve with guacamole salad. Make plenty. This is great as leftovers, warmed in microwave.
