CHICKEN CORDON BLEU 
2 chicken breasts, halved (2 1/4 lb. & boned)
Salt & pepper
4 slices ham (4 oz.)
4 slices Swiss cheese (4 oz.)
3/4 c. flour
2 eggs, beaten
1 c. fine dry bread crumbs
1/2 c. butter
1/4 c. white wine
Mushroom sauce

Flatten chicken breasts with wooden mallet. Sprinkle salt and pepper. Top each with ham and then cheese. Fold chicken over. Dip in flour, egg, then fine bread crumbs. In a fry pan, saute in butter until a light golden brown. Sprinkle white wine over the chicken. Place in a greased roasting pan. Cover pan with aluminum foil. Bake at 350 degrees for 30 minutes. When serving, top chicken with mushroom sauce.
