SPINACH ARTICHOKE CHEESE DIP | |
1 to 2 teaspoons butter 1 bunch fresh spinach (about 1 lb) 1 garlic glove minced 8 oz cream cheese 1/4 cup sour cream 1 can artichoke 1/3 cup pepper jack cheese 1/3 cup Monteray jack cheese Melt butter in sauce pan add garlic and spinach cook till spinach is soft add cream cheese and sour cream cook till creamy add artichoke, pepper jack and Monteray Jack cheese cook until cheese is melted and everything is well mixed. You might want to add a little water in the beginning with the butter just so the spinach doesn't stick. You can also substitute the butter for just about 1/8 cup water, which I prefer.
