SWEET AND SOUR PORK | |
3 lbs. lean pork, cut in 1" cubes 1/2 c. dark brown sugar 4 tbsp. cornstarch 1/2 tsp. salt 1/2 c. sweet red pepper strips 1 pkg. chow mein noodles 1 lg. can pineapple chunks 2 tbsp. soy sauce 1/2 c. vinegar 1/2 c. green pepper strips 3/4 c. scallions, thinly sliced Brown pork slowly in small amount of hot peanut oil. Add 1/2 cup water. Cover and simmer 1 hour or until tender. Drain pineapple, reserving syrup. Combine brown sugar and cornstarch, mixing well. Add pineapple syrup, vinegar, soy sauce and salt. Cook over low heat until thick. Pour over hot cooked pork. Stir. Let stand 10 minutes. Add pineapple chunks, green and red pepper strips and sliced scallions. Let stand 3 minutes. Serve over noodles or cooked rice. |
