RICOTTA FILLED CAKE 
1 box yellow cake mix
4 eggs
2 lbs. ricotta cheese
3/4 c. sugar
1 1/2 tsp. vanilla
1/2 lb. confectioners' sugar
Warm milk

Prepare cake mix according to directions. Pour batter into a greased 9x13 inch pan. Combine eggs, ricotta, 1 teaspoon vanilla, and 3/4 cup sugar in a bowl and mix well. Spread this over the cake batter and mix in very lightly. Bake in a preheated 350 degree oven for 1 hour.

Make icing by mixing confectioners' sugar with remaining vanilla and enough warm milk to dissolve the sugar. Frost the cake with this mixture when it has cooled.
