OATMEAL WAFFLES 
1 1/2 c. flour
1 c. quick cooking rolled oats
1 tbsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt, optional
2 eggs, slightly beaten
1 1/2 c. milk
6 tbsp. butter, melted
2 tbsp. brown sugar

In large mixing bowl, combine flour, oats, baking powder, cinnamon and salt. In another bowl, mix eggs, milk, butter and brown sugar. Add to flour mixture and stir until blended. Pour into preheated waffle iron. Close lid quickly. Do not open during baking. Use fork to remove baked waffle. Serve with butter and syrup or with fresh fruit and yogurt. Yield: 12 waffles or 6 servings. Diabetic exchange: 1 servings = 1 bread, 2 fats, 176 calories, 223 mg. sodium, 65 mg. chol., 21 gm. carb., 5 gm. protein, 8 gm. fat.
