APPLE CARROT CASSEROLE 
5 lg. carrots, sliced
5 c. apples, peeled and diced
5 tbsp. brown sugar
2 tbsp. cornstarch
1 tsp. nutmeg
3 tbsp. butter
1/2 c. orange juice

Cook carrots until tender. Drain. Arrange layers of carrots and apples in 7 x 11 inch casserole. Combine brown sugar, cornstarch, and nutmeg and sprinkle on top. Dot with butter and pour the orange juice over it. Bake uncovered, 40-50 minutes at 325 degrees.
