APPLE-ONION CASSEROLE 
3 Granny Smith apples, sliced
1 lg. onion, chopped
2 tbsp. brown sugar
3/4 tsp. cinnamon
3 tbsp. soaked currants
3 tbsp. butter

Saute chopped onions in 2 tbsp. butter until transparent. Add sugar, cinnamon, currants.

Line casserole with 1/3 of apple slices. Spoon on 1/2 currant/onion mixture. Add another layer of apples, then onion mixture. Top with final 1/3 of apples. Dot with 1 tbsp. butter. Bake at 350 degrees for 45 minutes.
