NEW YORK CHEESECAKE 
1 lb. Ricotta or cottage cheese
16 oz. cream cheese
1 1/2 c. sugar
4 eggs
1/2 tsp. lemon juice
1/2 tsp. vanilla
3 tbsp. cornstarch
3 tbsp. flour
1/4 c. melted butter
1 pt. sour cream

Blend ricotta or cottage cheese with cream cheese. Add sugar. Beat in eggs, one at a time. Add vanilla, lemon, flour, cornstarch and melted butter; mix well. Fold in sour cream; blend well.

Butter 10" spring pan and place mixture in a cold oven. Set oven at 325 degrees. Bake 1 hour. Turn oven off. Leave cake in oven for 2 more hours. Do not open. Cool and serve.

I have made this cheese cake many times and it turns out perfectly every time. We love that there is no graham cracker crust to get soggy and take away from the delicious cheese cake filling. The only thing that I do a bit differently to the recipe is to add a teaspoon of lemon zest to the batter to give it extra lemon flavor, but it isn't needed to WOW your dinner guests. It is my families favorite... hands down!
