BETH'S BROCCOLI CASSEROLE 
1 can of mushroom soup
1/2 c. of mayonnaise
1 sm. onion, finely chopped
2 c. grated cheese
3 to 4 doz. Ritz crackers, crushed
2 eggs, well beaten
1 1/2 to 2 lbs. fresh steamed broccoli

Mix well. Pour into large, greased casserole dish. Bake uncovered at 350 degrees for 1 hour or until firm, but moist, in center.
