BROCCOLI AND CHEESE CASSEROLE 
4 boxes of frozen broccoli
2 sticks butter
2 rows Ritz crackers
1 lb. pkg. Velveeta cheese

Cook broccoli as directed on package. Drain. Cut-up cheese and 1 stick butter. Mix with broccoli. Crush two rows of Ritz crackers (place in plastic bag and crush with rolling pin). Melt other stick of butter and mix with crackers. Put broccoli mixture in casserole dish. Top with cracker mixture. Bake in 350 degree oven for 30 minutes.

I've been making this for 20 years with slight variation. You can cut the butter in half and just drizzle it over the top at the end. I use regular shredded cheddar cheese, or mixed cheese and it is just as good as velveeta but maybe a little better for you? I also use a can of cream of celery soup and one egg... ok so maybe my recipe is different but it tastes great and is a favorite of everyone.

I have been making this for over 20 years and it's still one of my most requested Holiday recipes. This recipe is "Much" better when using Town House Crackers. I also use real butter. I also suggest using 3 sticks of butter, 2 for the Tubes of crackers. It needs 1 stick of butter per tube of crackers. I have made this using other veggies and it's always delicious. It's even delicious with mixed veggies. One of the best recipes ever!

My mother gave me the recipe years ago. Cook broccoli and drain saving some of juice. Maybe a cup. Cut Velveeta in slices. Take Ritz crackers put in bottom of 9x13 dish. Then put layer of broccoli and layer of cheese and then layer f cheese. Do two layers like this then cook 30 minutes on 350°F until cheese is melted. And is hot all the way through.
