PORK ROAST WITH APPLE TOPPING 
4-5 lb. pork loin roast
2 tbsp. flour
1tsp. dry mustard
1 1/2 tsp. salt
1/2 tsp. sugar
1/4 tsp. pepper
1/4 tsp. ground sage

TOPPING:

1 1/2 c. sliced apples (Granny Smith are best)
1/2 c. brown sugar
1/4 c. apple juice
1/4 tsp. cinnamon
1/4 tsp. mace
1/4 tsp. salt

Mix flour, salt, mustard, sugar, pepper and sage together. Rub mixture over surface of pork. Place fat side up in the roasting pan. Bake for 1 1/2hours at 325 degrees. Mix all of the topping ingredients together. Pour over roast. Bake 1 hour longer. Let stand for 10 minutes and serve.
