CHOCOLATE COVERED CHERRY COOKIES
1/2 c. butter, softened
1 c. sugar
1 egg
1 1/2 tsp. vanilla
1 1/2 c. flour
1/2 c. cocoa
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda

Beat butter and sugar until fluffy. Add and beat egg and vanilla well. Mix together flour, cocoa, salt, baking powder and baking soda and add to mixture. Shape into 1 inch balls. Press center down with thumb. Put a maraschino cherry in center of each cookie. Takes about 1 1/2 jars (10 ounce) of maraschino cherries (reserve juice).

FROSTING:

1 (6 oz.) pkg. chocolate chips
1/2 c. Eagle Brand sweetened condensed milk
4 tsp. reserved juice

In a saucepan, combine chocolate chips and sweetened condensed milk. When chocolate chips are melted, add reserved juice. Spoon 1 teaspoon frosting over each cherry. (Frosting may be thinned with more cherry juice if it is too thick.) Bake at 350 degrees for 10 minutes. Remove to wire rack and cool. Makes 48 cookies.
