SR. BEA'S PEANUT BRITTLE DELUXE 
2 c. sugar
1 c. corn syrup
1/4 c. water
1 1/2 c. salted Planter's peanuts
2 to 4 tbsp. butter
2 tsp. baking soda
1 tsp. pure vanilla

Combine first 3 ingredients in 3 quart saucepan; cook, stir over medium heat until sugar is dissolved. Continue cooking, stirring occasionally to 285 degrees F. Add nuts and butter and cook 300 degrees F stirring constantly. Remove from heat, stir vanilla and soda rapidly. Turn onto 2 well buttered baking sheets. Spread out with spatula as thin as you can. When candy begins to set, loosen from baking sheets. Turn it over. Then stretch and pull out the brittle as thin as you can. When cold, break into pieces. Good luck!
