SUMMERTIME PASTA SAUCE | |
Salt & pepper to taste 1/4 c. olive oil 1 summer squash, sliced or chopped 1 zucchini, sliced or chopped 1 lg. onion, sliced or chopped 1 c. mushrooms, sliced or chopped 1 lg. can crushed tomatoes 1 can tomato paste (for slightly thicker sauce) 1 tsp. oregano 1 tsp. basil 1 bay leaf 1 1/2 tbsp. sugar In olive oil saute squash, zucchini and onions until tender. Add can of crushed tomatoes. Stir. For a thicker sauce add tomato paste. Add mushrooms and spices. Stir in well. Heat just to boiling, then simmer for a good hour. Serve over any pasta. |
