ORANGE YAMS | |
2 lg. size yams 1 c. orange juice 1 c. sugar 1 orange peel, grated 1/2 tsp. nutmeg 1 tsp. cinnamon 1 stick butter 2 tbsp. vanilla extract Boil yams until tender. Cut into medium slices. Place in large baking dish. Then add half stick of butter. Sift sugar, nutmeg and cinnamon together. Peel one orange and grate orange peel very fine. Pour orange juice and grated peel in saucepan bring to boil and add half stick of butter. Add dry ingredients and vanilla extract. Cook until thickened like a syrup, stirring constantly. Pour over yams and bake at 375 degrees for 15 minutes. |
