ORANGE YAMS | |
23 oz. can yams or sweet potato 1 tbsp. corn starch 1/3 c. brown sugar (firmly packed) 1 c. orange juice 1 tbsp. butter 1 tbsp. orange rind, grated Slice potatoes in half lengthwise and place in single layer in oblong glass 1 1/2 quart baking dish. In saucepan, stir together corn starch and brown sugar, stir in orange juice, keep smooth. Stir constantly over moderate heat until clear and thick. Off heat, stir in butter and orange rind. Spoon orange sauce over yams. Bake in 400 degree oven for 15 to 20 minutes. Serve at once. |
