SUGARLESS COOKIES 
1/2 c. mixed dried fruit bits
1/2 c. unsweetened apple juice
3 tsp. corn oil
1 c. flour
1/2 tsp. baking soda
2 tbsp. granulated sugar substitute
1 egg (or egg substitute)
1/2 tsp. vanilla

Simmer fruits in juice 1 minute. Stir in oil; cool. Stir together dry ingredients. Add to fruit mixture and then add egg and vanilla. Dough should be soft but not liquid. Drop by teaspoon onto non-stick baking sheets, sprayed with cooking spray. Bake in preheated 350 degree oven for 12 to 15 minutes. Makes 36 cookies. 30 calories each.
