CASHEW BURGER CASSEROLE 
2 lb. lean ground beef
1 c. celery
2 c. cooked rice
1 c. cashew nuts
2 c. boiling water
1 sm. onion
2 cans chicken rice soup
1 lb. fresh mushrooms or canned
1 (8 oz.) can water chestnuts, sliced
Optional soy sauce

Brown meat. Add chopped celery and onion. Saute until transparent. Add soup and rice. Bring to a gentle simmer. Add boiling water, sliced mushrooms, cashew nuts and water chestnuts. Continue to simmer on low 30 minutes; add more water if needed.

Best if vegetables are not overcooked, leave crunchy.

Option: Serve with soy sauce.

Serves 4-6.
