PICKLED SHRIMP 
2 1/2 lbs. med. shrimp
1/2 c. celery
3 1/2 tbsp. salt
1/4 c. pickling spice

MARINADE:

1 1/4 c. white vinegar
1 1/2 tsp. salt
3 tsp. celery seed
2 1/2 tbsp. capers and juice
3 dashes Tabasco
4 lg. onions, sliced

Boil shrimp in celery, salt and pickling spices for 5 minutes. Peel shrimp. Layer shrimp and onions and pour on marinade. Chill for 24 hours.
