J.D.'S SCRAMBLED EGGS
2 eggs per person
Condensed milk
Fresh ground black pepper
Salt to taste
Butter
Heavy cast iron skillet

Break eggs in a bowl. Whip them real good for 1 minute. Add a good dollop of canned condensed milk, beat for another 2-3 minutes. Heat your skillet over real low heat. Melt a couple of tablespoons of butter and coat bottom and sides real good. Pour in your eggs, and after about 20 seconds, stir the middle up good with a fork, then let them cook for 2-3 minutes or until they just start to brown. Turn completely and cook until done, another 2-3 minutes.

Here's how to cook poached eggs and have them come out perfect every time. I learned this from an old-timer way back in the days of my youth.
