BROCCOLI CORNBREAD 
1 (10 oz.) box chopped broccoli, thawed & drained
1 lg. onion, diced
6 oz. creamed cottage cheese
3 eggs
1 stick butter, melted
1 dash hot pepper or hot sauce
1 box cornmeal muffin mix

Mix broccoli, onion, cottage cheese, eggs, butter and hot sauce and then fold in corn muffin mix.

Pour into well greased pan and bake at 350 degrees for 25-30 minutes until golden brown. Freezes well.
