SUMMER SAUSAGE 
5 lbs. hamburger
5 rounded tsp. Morton's quick salt
2 1/2 tsp. black pepper
2 tbsp. liquid smoke
2 tbsp. sage
2 1/2 tsp. ground mustard

Mix well; cover tightly and refrigerate. Take out every day and mix well for 3 days. On the fourth day, form in roll the size of half dollar. Put in baking pan on a rack. Bake 9 or 10 hours at 150 degrees. Turn several times. Very good sliced and served on crackers. Will keep well in refrigerator - don't use gas stove.
