COOKIE CAKE 
2 tbsp. unsalted butter, softened
1/2 c. confectioner's sugar
4 oz. cream cheese, softened
3 1/2 oz. pkg. instant vanilla pudding
1 1/2 c. milk
6 oz. non-dairy whipped topping
10 oz. Oreo cookies

Using an electric mixer, cream butter, sugar and cream cheese together in a large bowl. In another bowl, beat pudding with milk on high speed until thickened; beat in whipped topping. Add pudding mixture to butter mixture; beat on low speed until combined. Use a blender to make cookies into crumbs. Pour 1/2 cup crumbs on bottom of 2 quart glass casserole, top with some pudding mixture and continue layering, ending with crumbs. Serves 6.
