MEXICAN QUICHE 
1 1/2 c. shredded Jack cheese
1 c. shredded cheddar
1 (4 oz.) can diced green chiles
1/2 tsp. salt
3 eggs, beaten
1 c. half and half
1 (9 inch) pie shell, baked golden, about 12 minutes

Sprinkle all Jack cheese and half the cheddar over bottom of partially baked pie crust. Spread chiles over cheese. Beat half and half with eggs and salt until blended; pour into crust. Sprinkle remaining cheddar over filling. Bake in 325 degree oven for 40 minutes or until center is set; shake to test. Let stand 15 minutes before cutting.
