MEXICAN LASAGNA 
1 lb. ground turkey, browned
1 tsp. seasoned salt
2 tbsp. taco seasoning
1 can tomatoes or Rotel
1 c. chopped tomatoes
1 (8 oz.) can tomato sauce
1 c. cottage cheese
3 eggs
12 (6 inch) corn tortillas
6 oz. Monterey Jack cheese, grated

Simmer first 6 ingredients 10 minutes. Combine cottage cheese and eggs in blender. Spray 9x13 pan with Pam. Place 1/2 meat mixture in pan. Top with 6 of the tortillas. They will overlap. Top with 1/2 cottage cheese mixture, then 1/2 Monterey Jack cheese. Repeat layers. Bake at 350 degrees for 25 minutes.
