MAMA ROSA'S CHOCOLATE CHIP
COOKIES
 
1/4 lb. butter (room temperature)
1 c. sugar
1 c. Ricotta cheese
1 egg
1 1/4 tsp. vanilla
2 c. flour
3/4 tsp. salt
1/2 tsp. baking soda
6 oz. mini chocolate chips
1/2 c. nuts (optional)

Preheat oven to 350 degrees. Cream butter using electric mixer. Gradually add sugar; cream well. Add Ricotta cheese, egg and vanilla. Mix well. Add flour, salt and baking soda. Mix well. Fold in chocolate chips and nuts. Drop by teaspoon onto ungreased cookie sheet. Bake 10 minutes. Cookies will be light in color.
