1 c. boiled mashed potatoes 1 c. sugar 1 1/3 c. butter 2 tsp. salt 6 eggs 4 c. scalded milk 4 tbsp. yeast 1/2 tsp. vanilla 1/2 tsp. lemon extract Approximately 12 c. flour Mix boiled mashed potatoes, sugar, butter, salt and scalded milk. Add yeast then the eggs, flavorings and flour. Beat or mix up well. Let rise 30 minutes. Roll out and cut. Let rise and fry in deep fat (add 1/2 teaspoon ginger to grease to prevent grease from soaking into doughnuts) it takes about 2 pounds of powdered sugar to glaze this recipe. Glaze - water, vanilla, a little butter. Should be quite runny. Makes about 100 doughnuts. |
