APPLE CAKE 
4 lg. tart apples
1 tsp. vanilla
1 c. plain yogurt
1 c. sugar
4 lg. eggs
2 1/4 c. unbleached all purpose flour
1 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1 tsp. sugar

Core, peel and slice apples. Place in small bowl and sprinkle with vanilla. In large bowl, combine the yogurt, 1 cup sugar and eggs; beat well. In another bowl, whisk together the flour, salt, baking powder and soda. Stir this mixture into the egg mixture. Butter and flour a 10 inch bundt pan or two 8 x 4 inch loaf pans.

Layer batter, then apples, batter, apples, and top with batter. Sprinkle 1 teaspoon sugar over top. Bake 50-60 minutes at 350 degrees. Makes 2 loaves or 1 bundt.
