OATMEAL CHIPPER COOKIES 
1 1/4 c. quick-cooking oats
1 c. flour
1/2 c. sugar
1/2 c. brown sugar
1 c. coconut
1 tsp. baking soda
1 tsp. salt
1/2 c. chocolate chips
1/2 c. oil
1 egg
1 tsp. vanilla

Mix all dry ingredients into a bowl. Add oats, chocolate chips and coconut. Stir in oil, egg and vanilla. Mixture will seem almost dry. Form into 1 inch balls. Place on ungreased cookie sheets. Bake at 325 degrees for 12 to 15 minutes.
