CANNED HERRING 
48 herrings
1 c. salt to 1 gal. water
18 pt. jars or 9 qt. jars

Scale and clean fish. Cut into sizes that will fit in jars. Soak fish for 1/2 hour in salt water. Rinse in clear water and pack in jars tightly with 1 inch headspace. Use 10 pounds pressure for 1 hour.
