CHOCOLATE PEANUT BUTTER PIE | |
2/3 c. sugar 1/4 c. cornstarch (clear gel use 1 tbsp. more) 3 c. milk 3 egg yolks, slightly beaten 2 tbsp. butter 1 tbsp. + 1 tsp. vanilla 2 heaping tbsp. chunky peanut butter 3/4 c. miniature chocolate chips 1 baked & cooled pie shell Mix sugar and cornstarch in 8 cup glass measuring cup. Stir in milk gradually. Microwave on high, stirring every minute until mixture thickens and boils. Then boil for 1 minute. Stir at least half of hot mixture gradually into egg yolks. Blend egg yolk mix back into remaining pudding base; microwave on high for 1 minute. Stir in butter and vanilla. Stir in peanut butter; blending well. Add chocolate bits and stir only once or twice to marble. Pour into cooled and baked pie shell. |
