SWEET POTATO BISCUITS 
1 c. sifted flour
3/4 tsp. salt
1/4 tsp. nutmeg
2 tsp. baking powder
1/3 c. shortening
1 c. mashed sweet potatoes
1/3 c. light cream

Sift flour, salt, nutmeg and baking powder together. Cut in the shortening with a pastry blender. Work in the sweet potatoes and cream.

On a lightly floured surface knead the dough for about 5 minutes. Roll out 1/2 inch thick. Cut with a floured biscuit cutter. Transfer to a greased baking sheet.

For soft biscuits place close together. For crisp ones, leave space between each. Bake in a preheated 350 degree oven for 12 minutes or until brown. Makes 24 biscuits.
