SWEET POTATO BISCUIT | |
1 3/4 lb. baked or boiled sweet potatoes (approx. 3 med. potatoes) 1/2 c. solid white shortening (Crisco) 1 1/2 c. self-rising flour 1/2 c. sugar Mix sweet potatoes and Crisco together until smooth. Then mix flour and sugar into potato mixture. Work together until blended. If dough is very sticky add flour sparingly. Pinch off piece of dough and roll in hand until its smooth. Place in pan to bake. Repeat until all dough has been rolled. Bake at 425 degrees until done, about 25-30 minutes. If your oven is very hot bake at 375- 400 degrees. |
