“SPINACH GREENS” IS IN:

SPINACH GREENS 
1 lb fresh spinach
4 cloves garlic, minced
4 scallions, chopped
2 tbsp. extra virgin olive oil or bacon drippings (or a combination)
juice of half a lemon
1/2 tsp. red hot pepper flakes

Wash spinach and pat/drain dry in colander. Tear large leaves into pieces and discard stems. Add olive oil to a hot skillet or wok. Stir fry garlic, scallions and spinach and hot pepper for several minutes or just until spinach wilts, not allowing garlic to brown. Sprinkle with lemon juice (or alternatively, hot sauce or red wine vinegar).
